Sadly, some providers still want us to fax authorizations, releases and other documents to them instead of accepting emails. It would be great if there was a solution to fax a document directly from the Case Docs Screen and post a note that a document was faxed.
If someone has a workaround, please add a comment with your solution.

If you add an efax address as an email for each contact, you can do this. I do it all the time.
If you have efaxing services you should be able to efax it via email and then save the email.
This may depend more on the method you use for faxes. We use RingCentral for faxes, which is e-mail based--we send faxes via e-mail, and receive confirmations back to the e-mail that sent it. This means faxing from CaseDocs is as simple as using the e-mail function, and then using the Outlook add-in to post the transmission result to Notes.
