If you are using Windows 10 Pro, you can dictate into a note. Obviously, you will need a microphone. Most cameras automatically have a microphone. Start a new note, pick the topic, place your cursor into the body of the note hit the Windows button (between the left crtl button and the alt button) + the letter H. It will start dictation built into Windows.
